Job description
The main purpose: The Head of Food and Beverage (F&B) must provide leadership, direction, and manage the overall day-to-day running of the F&B operations in accordance with the company’s business objectives and standards. The incumbent is responsible for managing and controlling all F&B-related costs, including staffing and all food and beverage expenses. The incumbent is responsible for managing customer expectations and maintaining consistency from the F&B service staff. The Head of F&B is responsible for improving operational efficiencies, increasing revenues, and improving margins by managing and controlling costs. They must ensure that all staff adhere to the CTICC’s policies, procedures, and standards.
Reporting to the: Chief Operations Officer (COO)
Key responsibilities will include but are not limited to:
Monitor and ensure implementation of the F&B strategic priorities in line with the approved CTICC business plan.
To work close with the Executive Chef and report any food requirement from clients to the Executive Chef to ensure a seamless operation and achieve desired results.
Provide direction, leadership and management of day-to-day operations of the coffee shops, public catering areas, all Front of House (FOH) and Back of House (BOH) areas.
Manage and control of all F&B related costs e.g. Food and Beverage costs, staffing, costs ensuring that staff requirements are aligned to business levels.
Liaise with clients and attend pre-conference and debrief meetings to ensure smooth coordination for the FOH operations during events.
Ensure compliance with company policies and procedures.
Conduct weekly walkabouts of all FOH and BOH areas ensuring cleanliness, health & safety and adherence to company standards.
Ensure monthly, quarterly and annual reports are prepared and submitted to the COO as per the agreed timelines.
Ensure high level of customer service and take appropriate action where necessary.
Ensure accurate monthly, quarterly and annual food, beverage and equipment counts are performed and variances are investigated.
Conduct key performance assessments of direct reports as per the agreed key performance indicators.
Prepare training plans for the development of staff in the F&B division.
Analyse and ensure training needs are addressed for each direct report and all employees in the F&B division have signed the individual development plans (IDPs).
Manage Human Capital (HC) requirements including but not limited to recruitment of staff, performance management, time & attendance, promote teamwork, staff development and succession planning.
Review, monitor and evaluate the performance of service provides in accordance with the agreed Service Level Agreements (SLAs’).
Ensure that monthly meetings are held with service providers and any non-conformance to the SLA is recorded and the service provider held accountable.
Keep up to date with food and beverages trends and best practices.
Attend monthly meetings with other departmental heads i.e. MANCO members.
Together with other MANCO members in the Operations Department, manage the grading assessment and ensure CTICC maintains the 5* grading of its facility.
Job requirements
Minimum qualifications and experience:
Matric certificate / Grade 12 or equivalent (NQF Level 4).
Preferred: Bachelor’s degree in Hospitality or Food & Beverage Management or relevant Food and Beverage qualifications (NQF Level 7).
Management / Leadership Development Qualification is advantageous.
Personal Attributes: This position would suit an individual with excellent command of the spoken and written English language, excellent customer service attributes, innovative thinker, hands-on and pragmatic, quality driven, well-groomed with a vibrant and a stress-resistant personality.
